A transmission cooler is a really great idea for your Dad's truck as the temperature range you mentioned is too hot to allow a transmission to survive very long. I'd recommend the Derale part # D13504 as it's a plate fin cooler which is one of the most efficient styles and is larger at 11" Wide x 12" tall x 7/8" deep so it's going to do a really great job reducing the temperatures to a much safer range.

Your trailer must sit pretty low to call for your shank setup to sit that low. For your 2023 Chevy Silverado 3500 that has the OEM pucks the B and W Companion hitch part # BWRVK3710 would be a really great 20k option that fits.
