Adding tongue weight to your trailer will be the best way to prevent sway like you mentioned. That said, if you don't have a way to keep weight in the front of the trailer friction sway control like part # 83660 would do an excellent job preventing sway from winds as that's exactly what it was designed to do.

You could use an adapter like # PK12716, but I'd personally rather use a t-connection like what's provided by the # 118384 from Tekonsha as a permanently mounted solution. Too often folks will leave an adapter sitting on the bumper and drive off, and the adapter is gone-never to be seen again (ask me how I know this).

If the trailer has electric brakes, you will need a brake controller to actuate them. GM didn't start offering a factory brake controller until a few years later.

If you installed Timbrens all around on your 2004 Chevy Tahoe you would get somewhat improved performance in the areas you mentioned. The front Timbrens are part # TUF100 and the rear would be part # TUR100.

Since you have a low clearance situation with the 265/65R18 tires on your 2018 Chevy Tahoe I recommend using the Konig Self-Tensioning Snow Tire Chains # TH01594267 as they are Class S compatible (for low clearance situations) and they use D links in a diamond pattern.
Please note that if any damage were to occur as a result of the chains on your tires it won't be covered under warranty since they stated in the manual not to do this.

If your old system was not properly adjusted or was overloaded, it would explain why not enough weight was transferred to the front vehicle axle. I may have a solution for you, but using SumoSprings like the # SSR-204-40 on your already lowered 2004 Chevy Tahoe are not an a solution that will work for you. This would create a situation where the axle is going to engage sooner and would likely effect your ride quality adversely.

If your 2010 Chevy Tahoe came with a factory installed 7-Way trailer connector then you could use # C55384 which will Tee into the wiring for the vehicle trailer connector and provide a separate 4-Way.
Or if it came with a factory 7-Way another option is to use # HM40975 which has a 4 and 7-Way in it and then use an adapter, such as # PK12716, to plug into the 7-Way so you could plug in another 4-Way trailer side connector.

Lithium batteries really are much nicer than lead acid batteries in terms of how well they hold a charge. There is a much bigger investment required though as the batteries themselves are more expensive you need to use chargers designed for them since they charge at a higher voltage. You would need a new charger from your tow vehicle as well as the inverter from shore power to accommodate this.

We do carry a trailer hitch for your 2012 Chevy Tahoe. I recommend the etrailer class 3 hitch # e35KR. This has a 2" receiver and is rater for towing 6,000 lbs and 600 lbs tongue weight. It will be very easy to install. About as easy of a hitch install as you will find. You just install 3 bolts on each side and that is about it. Best option is to go with a supplemental cooler installed after your factory cooler as this will maximize the cooling of the fluid. For that your best option is the Derale part # D13504 which is a very efficient and larger cooler that will get your transmission fluid temperatures down into a range that will maximize the life of it.
