For your 2003 GMC Sierra with a factory 7-pin connector I recommend the Tekonsha # TK90160 brake controller and the Tekonsha # 3015-P wiring adapter. The wiring adapter will make your installation go quick and easy with no need for wire cutting or splicing. It just plugs right into your truck's preinstalled jack in the cab.

The Tekonsha Primus IQ Trailer Brake Controller is an easy to program and use proportional controller. The manual slide bar for manual trailer braking is easy to use. I use this same controller in my Colorado and find that sometimes when the trailer ball has back tension and won't let me unlock the coupler that I use the controller brake to hold the trailer in place while the truck pulls tension forward. I have not had any problems with it.

I have attached an installation video for a 2016 Chevy Silverado. While this is a different truck it should illustrate the simplicity of the installation. Your unit will come with instructions.
