What you propose doing is theoretically possible, but keep in mind that if you fabricate a 2 inch hitch from your existing Class I like the Curt # C11699, the result will have a unknown weight capacity. There are indeed hitches available. I'd recommend either the Curt # C11416 that you'd looked at or the EcoHitch # 306-X7322.
If I had to choose between the two, I'd personally go with the EcoHitch because it uses the more common 2 inch receiver opening and is compatible with many more hitch mounted accessories than the Curt # C11416 that uses a 1-1/4 inch receiver. The 2015 Honda Pilot should have been equipped with a factory trailer hitch, which is why you're unable to find an aftermarket model. Check the rear bumper fascia for a removable panel or door that is hiding the hitch receiver. Once removed, the receiver tube should be visible.
If you crawl under the vehicle and look up at the underside right behind the rear bumper, you should be able to see the hitch.
