What Class Hitch is the EcoHitch 306-X7326 for a 2017 Kia Soul?

The EcoHitch item # 306-X7326 is a closer to a class II hitch than a class III. For some reason EcoHitch doesn't use the class standard. It has the function of a class III but the capacity of a class II. This hitch is confirmed to fit your 2017 Kia Soul. It has a 2" hitch receiver opening which is a very common hitch size so you will have no issue finding hitch-mounted accessories. The maximum towing capacity is 2,000 lbs and tongue weight capacity is 300lbs so make sure you are not exceeding that weight. You will want to verify with your owner's manual what your Soul's actual capacity is.
To tow with this hitch you will need a wiring harness item # 118637 and a ball mount kit item # C45534.
