Best Trailer Hitch for 2018 Subaru Impreza

we need a hitch for our 2018 Impreza wagon but would like the one that weighs the least.

Since all hitches are made of steel and are designed to bolt on to the exact same points on any given vehicle there is not usually much weight difference between brands of hitches of the same receiver size and Class rating. But in the case of your 2018 Subaru Impreza Wagon there are actually three different Classes of hitch available, Classes I, II and III, which do have differing weights since some simply have more steel material.
Here are the hitches and their weights by receiver size and Class:
1-1/4-inch Class I:
Draw-Tite # DT24959, 24-lbs shipping weight; Curt # C11465, 29-lbs shipping weight
1-1/4-inch Class II:
Draw-Tite # 36644, 31-lbs shipping weight
2-inch Class III:
Draw-Tite # 76209, 37-lbs shipping weight; Eco-Hitch # 306-X7350, 35-lbs shipping weight
It is not surprising that the heaviest hitch, the 2-inch Class III Draw-Tite # 76209, is also the hitch with the highest weight capacity for both tongue weight and for trailer weight. I recommend this hitch for that reason whether you intend to use a bike rack or tow a small utility trailer.
For some perspective on these hitch weights keep in mind that just a single gallon of gas weighs more than 6-lbs. So the weight differences between hitches is actually pretty minor in the scheme of things. If you drive your car 20 miles you've burned about a half-gallon, or 3-lbs worth of gas.
In terms of your vehicle's capacities you will want to check your owner documentation for the car's own weight ratings since these are quite possibly lower than the ratings for the Draw-Tite hitch. Always stay within the capacity of the lowest-rated part of your towing system.
