The only available trailer hitches for your 2004 Subaru Outback Wagon all have 1-1/4 inch receiver openings. This is simply because the vehicle's towing and tongue weight capacities are lower than what a higher class trailer hitch (and larger 2 inch receiver opening) will provide. Trailer hitch manufacturers do this to prevent vehicles with lower capacities from being overloaded with a higher rated hitch.

If you do not have the Sport model, I recommend the Draw-Tite Class II Frame Receiver Hitch # 36284. This is a Class II trailer hitch that will provide a tongue weight capacity of 300 pounds.

If you have the Sport model with single exhaust, you will instead need the Curt Class I Receiver Hitch # C11497. This is a Class I trailer hitch with a tongue weight capacity of 200 pounds. Please note that Curt requires all non-trailer loads such as bike racks and cargo carriers to be supported by stabilizing straps # 18050.

As you mentioned in your question, in order to use 2 inch hitch accessories with the 1-1/4 inch hitch receiver on your vehicle, you will just need to use an adapter like the Brophy # HTAD. Keep in mind that using this or any similar adapter will reduce the tongue weight capacity of the hitch by 50%. This means that the 300 pound tongue weight capacity on the above mentioned Draw-Tite Trailer Hitch will be reduced to 150 pounds when using the adapter.
