I definitely understand being a bit overwhelmed by the amount of options in front of you, however I can definitely help with differentiating the trailer hitches for your 2019 Subaru Outback Wagon along with explaining my personal recommendation, which is the Curt Class III # C13410.
First off, all the hitches for your Subaru can be pretty easily broken down into two categories in terms of design; hidden and non-hidden. The Curt # C13410 and Draw-Tite # 76227 both feature a 2" receiver that drops down from the crosstube, which allows the tube to be completely hidden behind the bumper. With this type of hitch only the 2" receiver is visible for a cleaner, OEM-like appearance from the rear. This also provides improved ground clearance compared to the non-hidden models.
I specifically recommend the Curt # C13410 because of the particular powder coat they use on their hitches, which tends to have a longer lifespan than the Draw-Tite models. I have attached an image of this hitch mounted so you can see exactly how it looks.
The other remaining hitches for our Subaru; the etrailer.com # e98847, Draw-Tite # 75673, and the Curt # C13206, all feature a crosstube that will drop below the bumper, allowing almost all of the hitch to be seen behind the vehicle. This does typically lead to a simpler installation but it also reduces ground clearance and definitely doesn't look as nice, especially on brand new vehicles like yours.
I have attached an installation video on the Curt # C13410 that you can use for reference as well.
