Hitch Recommendations for a 2003 Chevy Silverado

Does it make a difference which hitch is used with a 2003 Chevy Silverado 2500HD extended w/short box and diesel?

The biggest difference will be capacity. The Curt Hitch part # C15302 that you referenced is on the high end of the capacity spectrum. It's a Class V hitch that has the following capacities:
Maximum gross trailer weight: 16,000 lbs Maximum GTW when used with weight distribution: 17,000 lbs
Maximum tongue weight: 2,400 lbs Maximum TW when used with weight distribution: 2,400 lbs
On the opposite end of the capacity spectrum is the Curt Hitch part # 13208 which has the following capacities:
Maximum gross trailer weight: 8,000 lbs Maximum GTW when used with weight distribution: 12,000 lbs
Maximum tongue weight: 800 lbs Maximum TW when used with weight distribution: 1,200 lbs
