With this goose neck adapter is it possible to hook up to and unhook to the truck at an angle instead of straight back?

Yes, you will be able to hook up to the trailer at an angle as long as you can get the truck positioned under the Fifth Wheel to Gooseneck Trailer Hitch Adapter, item # AM3100, properly. Just make sure that you do not back into the trailers loft section if there are clearance issues.
