It doesn't sound like the hitch install would cause the wiring issues. More than likely you also had a trailer wiring harness added as well like the part # C73FR on the Edge Titanium. There is a few reasons why your left blinker could be hyper flashing. It could be an issue with the ground of the wiring. You want to make sure there is a good ground to a clean bare metal surface of the vehicle's frame. The harness may not be fully seated with the correct plug. If that is the case, they will need to unplug it and plug the connections back in. This sounds like it could be the reason since you can't disable cross lane function. That is not something I have heard of after installing a harness.
Another reason for hyper flash is the Edge has LED lights and the LED lights will flash like that because they do not provide enough power draw for the system to recognize them, and the vehicle bulb-out sensor thinks there is a bulb out on the circuit. They may need to add resistors like part # DI34ZR. I definitely recommend taking the vehicle back and have them take a look at it.
If all you had added was the hitch, I don't see this causing wiring issues and you may consider taking the vehicle to a mechanic. Most aftermarket trailer hitches are custom fit and bolt right up to the frame.
