Can a 2005 Chrysler PT Cruiser Tow a Wave Runner

Going to buy a wave runner how much can I tow?

Depending on the size of the engine on the wave runner, a single wave runner and trailer can weigh between 700 and 1000 lbs. Although the Curt Class I receiver you mentioned has a 2000 lb towing/ 200 lb tongue weight capacity, you still must abide by the towing capacity of the vehicle. From what I have been able to determine, your PT Cruiser has a towing capacity of 1000 lbs. You will want to consult the owners manual to confirm this.
If the weight of your wave runner plus the weight of the trailer is at the lower end of the weight range I mentioned, you should be fine. However, the closer the weight would get to the 1000 lb figure, the more uncomfortable I would become. You should not under any circumstances exceed the manufacturers stated towing capacity.
If your PT Cruiser has an automatic transmission, I would strongly urge you to install a transmission cooler like part # 13502. A transmission cooler provides inexpensive protection for your transmission.
In addition to the hitch and the draw bar and pin and clip included with it, you might also need the following:
Wiring harness with 4-pole trailer connector, part # C55532
2 inch diameter trailer ball, part # 19258
1-7/8 inch diameter trailer ball, part # 19256
Locking hitch pin, part # e98879
