Both the etrailer Trailer Hitch Receiver # e98855 and the Curt Trailer Hitch # C13370 referenced in your question are Class III hitches that are confirmed to fit your 2018 Honda Odyssey. These will both install at the same location on your vehicle's frame and the hitch visibility for both models will be about the same.
The primary difference between the two is their weight capacity. The etrailer # e98855 features a higher towing capacity of 5,000 lbs when used with a weight distribution system. Otherwise, they both have 3,500 pound towing and 525 tongue weight capacities. With all things considered, they are so much alike that I recommend going with the etrailer # e98855, it has a lower price.
Regardless of the hitch you decide to go with, you will want to check the owner's manual on your Odyssey for its specific towing capacity. You will always need to stay under whichever capacity is lowest (the hitch or the vehicle). I have included the installation details on the Draw-Tite Trailer Hitch for you to check out.
If you are looking to do any towing, I recommend the Tekonsha T-One Vehicle Wiring Harness # 118753. This will easily install a 4-Way connector at the rear of the vehicle by connecting directly to the ports behind the driver side trim panel. I have attached the installation instructions for this harness that you can also review.
To tow a trailer, you will also need a ball mount. I have included an article that explains how to choose the best ball mount for your trailer, along with a link that will take you to our available selection.
