According to the owner's manual, the 2016 Sportage can tow 1000 lbs, or 2000 lbs if the trailer is equipped with brakes. The maximum trailer tongue weight (maximum amount of weight that can safely be suspended from the hitch) is 200 lbs.
The Curt Class III Hitch, part # C13120 would be an excellent choice. As you can see, the hitch itself has higher capacities than the vehicle does, but because the vehicle's capacities are lower, you'll be limited to the capacities of the vehicle.
For trailer wiring, I'd recommend the # 118526. For a ball mount, use the # C45030 and the # 19260 for a 1-7/8 inch ball or # 63845 for a two inch and a pin and clipe # pc3.
If the trailer you choose has electric brakes, you'll need a brake controller to actuate them. A proportional controller like the Tekonsha Prodigy P2, part # 90885 would provide an easy to use unit that would give you safe and predictable braking. To wire the controller, you'll need our # ETBC7 install kit plus the # 118526 trailer wiring I mentioned above.
