The T-One Vehicle Wiring Harness # 118760 is the same for the 2016-2022 Honda Pilot. I have linked an installation video below for this harness on a 2021 Pilot so you can see the installation process.
The installation is different than the previous T-One Vehicle Wiring Harness # 118558 that fit the 2012-2015 Pilot. This harness had a connector on the outside of the vehicle for the 4-way and did not require as much removal of interior panels as the new body style.

We have not had a chance to install the etrailer Trailer Hitch Receiver # e98848 on a 2022 Honda CR-V yet, but we have installed it on a similar 2021 Honda CR-V.

You are correct they are different than the standard brackets as the brackets do install somewhat differently on this particular truck. You have it right; when inflated, the air springs will act as a support to the coil springs on your Odyssey, which means they springs won't fully compress like they would without the springs. The correct fit for the Air Lift springs on your 2012 Honda Odyssey is the following part:

However, a sensor relocation kit (Honda part number I08L91-TG7-100C) is available directly through Honda. The Class III hitch with the best ground clearance for a 5th generation Honda Odyssey like your 2021 model would be the Curt # C64NR which would provide about 12 inches of ground clearance under the receiver tube. This hitch would also be the least visible and would have the crossbar tucked up behind the bumper/fascia. This adds to the installation difficulty but really helps provide additional ground clearance (1-1/2 inches more clearance than the # e98855 that you'd looked at).

I took a look at the online owner's manual for your 2018 Honda Accord with a manual transmission and on page 463 it does address flat towing. You do put it in neutral and set the power mode to ACC, but also remove fuses, and there is a procedure outlined to do so. You can change the lock core in the Thule Cable Lock, # TH538XT, to match the lock cores on your Thule bike rack. You will just want to buy a replacement lock core in addition to the cable lock.
