Hello. When installed in a 2019 Prius Prime does the hitch extended out far enough for the installation of the Thule T2 Pro XT 2 bike rack? Thank you.

I have a different bike rack option for you, but the Curt Trailer Hitch Receiver # C11473 you were looking at and all of the available trailer hitch receivers for your 2019 Toyota Prius Prime will measure right at 7" from the center of the hitch pin hole to the most outward edge of the rear bumper.
Your Thule T2 Pro XTR Bike Rack for 2 Bikes - 1-1/4" Hitches - Wheel Mount # TH23JV also measures 7" from the center of the hitch pin hole to the closest edge of the rack, so the bike rack will rub up against your bumper.
Instead I recommend going with a bike rack that has a longer shank to avoid clearance issues. I recommend the Swagman Chinook Bike Rack for 2 Bikes - 1-1/4" and 2" Hitches - Frame Mount # S64683 which measures 12" from the center of the hitch pin hole to the closest edge of the rack giving you plenty of clearance. This rack can accommodate two bikes weighing up to 45lbs each.
I included a video of the # S64683 for you to take a look at.
