Good news!
Your 2017 Ford Escape Fwd can absolutely be dolly towed and you will want to the transmission in park with the front wheels on the dolly.
If you do not already have a dolly I recommend the Roadmaster Tow Dolly with Electric Brakes - 4,250 lbs # RM-2050-1 which will work perfectly with the 62" track width of your Escape, and since the curb weight of your vehicle is only 3500-3650lbs it will not overload the dolly.
To activate the electric trailer brakes on the # RM-2050-1 you will also need a 7-way connector # PK12706 which will plug directly into the 7-way connector on your tow vehicle.
In addition you will need to make sure that your tow vehicle has a trailer brake controller. If it does not just let me know the Year/Make/Model and I would be happy to make a recommendation for you.
I included videos of the products mentioned for you to take a look at.
