How big in weight rating of a 5th wheel hitch do I need to pull my 12,000 pound trailer, is 16,000 sufficient?

A 16000lb 5th wheel hitch like the Reese 5th Wheel Trailer Hitch w/ Square Tube Slider - Dual Jaw - 16,000 lbs # RP30051 you were looking at would be plenty for towing your 12000lb 5th wheel trailer with your 2021 Ram 2500.
The # RP30051 is a sliding hitch designed for trucks with a 6-1/2' bed, if your truck has the 8' Bed you will need a fixed hitch like the # RP30047 instead.
Now if your 2021 Ram 2500 has the OEM towing prep package you will also need # RP30154 to give you the industry standard rails needed to use the # RP30051 or # RP30047.
If your truck does not have the OEM towing prep package you will need to install industry standard rails of which I recommend the Curt Custom Fifth Wheel Installation Kit for Ram Truck - Carbide Finish # C16427-204 as they are custom fit for your truck and do not require any drilling into the frame of your new truck.
