According specs I've located online, the 2014 Ford Escape will have a 2000 lb towing capacity if equipped with the 1.4L engine or 3500 lb if equipped with the 2.0L. You should be able to pull that pop-up with no problem. I would recommend a transmission cooler like # D13502 if you plan on pulling the camper in a mountainous area, though as it would offer inexpensive protection for your transmission.

For a trailer hitch, I'd recommend the Curt Class III hitch, part # C13186. The trailer wiring setup needed will depend on if the pop up has brakes or not. If not, you'll need the # 118566 harness. If the pop up does have brakes, and you'l like them to function you'll need to install the # 118566 and a brake controller. Assuming you have a smart phone, the easiest brake controller installation would be the Curt Echo, part # C51180. You'd also need the wiring kit, part # ETBC7L. The kit includes a trailer connector adapter plus all the wiring and hardware needed to complete the installation.

I've linked to installation videos that you'll find helpful.
