Could Convert a Ball Fifth Wheel Gooseneck Adapter be Used with Short Bed Truck

Will the convert a ball adapter work with short bed truck or do I need the offset one

The biggest downside to using a fifth wheel to gooseneck adapter like the # CAB-C5G is that you can't gain additional turning clearance when towing a short bed truck like what a slider fifth wheel hitch can provide. Since the offset of the # CAB-C5GX1216 pivots as the truck turns you don't gain as much clearance when you need it the most though so typically this doesn't gain you as much clearance as you'd think.
That said, if the nose of your trailer is tapered you may not need additional offset. It's more common for fifth wheel campers to be made now with tapered noses to help with short bed clearance so you might check to see how wide the nose of your trailer is and if you have an extended pin box and we can go from there.
