There are two accepted ways of wiring a 6-way connector. One uses the center pin as the 12-volt power accessory feed, the other uses the center pin for the brake output circuit. It sounds as if your vehicle and adapter are wired differently, locking up the brakes as soon as the trailer is plugged in.

The Hopkins 7 Pole To 6 Pole Adapter, part # 47549, that you have referenced will allow the center pin to be wired as a 12V lead or a brake lead, whichever is needed to match your trailer. It comes wired up as the 12-volt lead, but it can easily be taken apart and rewired for the center pin to be for the electric brakes. To wire the center pin for brakes then the blue and black wires will be switched.

To test the pins in the 6-Way connector at the rear of your vehicle, you will need to use a circuit tester like, part # PTW2993. First, ground the alligator clip to the vehicle chassis and touch the test light to the center pin. If the light in the tester lights, then the center pin is hot, 12 volts.

If the center pin is for brakes, it will only have power when the brake pedal is applied or when the manual brake lever on the brake controller is activated.

I am including a link to a FAQ wiring page that has a diagram of the connector and the connections inside the connector.
