Depending on the weight of your current bike rack and your bike will determine if using a 2 inch adapter will work or not.

The hitch adapter will reduce the capacity of the hitch by 50 percent causing the tongue weight of the hitch to now be 100lbs. If the combination of weight for your bike and 2 inch rack is below this then a 2 inch adapter will work for you.

I recommend the Curt hitch # C11497 hitch along with a reguired stabilization strap like the # 18050. The Curt hitch requires the strap for warranty purposes and is a good idea anyway. The 1-1/4 inch hitch to 2 inch hitch adapter I recommend for you is the # HTAD because it will be compatible with the Class I hitch for your 2007 Subaru Impreza. However,

It is important to note that using a reducer like the # HTAD will reduce the hitch capacity by 50%. Even though your vehicle is rated for a 200lbs tongue weight and 2,000lbs towing in your owner's manual, the # HTAD will cause the hitch to have limits of 100lbs tongue weight and 1,000lbs towing. You must go by the lowest component, which is now the reduced capacity hitch.

Another option is to invest in a bike rack that works with the 1-1/4" hitch for your bikes and sell your current rack to someone else.

I have linked all the above recommended parts to this page for your convenience.
