The Full Size Locking Steel Flush Door Latch # L3980 that you referenced can fit doors that are up to 1-1/6 inches thick. It would have no problem fitting yours that is 1 inch thick.

This latch requires a hole size that is 3-3/8 inch by 4-5/8 inches.
