Probably the easiest way to get to the wires to install the trailer wiring harness # C59496 is to pretend as if you were going to have to change out a tail light bulb (or LED panels or bulbs). There is a process to follow to access them.

From the picture you provided, I can say that you are almost there. The Tekonsha Plug-In Wiring Adapter # 3016. I included a picture for you to check out, but it's actually the port directly above the white one with the blue housing on the left hand side. In the installation process of the Curt Class III # C13050 hitch, the spare tire is temporarily removed because the heat shield and exhaust brackets need to be modified as shown in the installation instructions and the install video I've linked for you. The Invisi-Brake # RM-8700 only applies the toads brakes when the RV brake lights are illuminated. So if you are engine braking then presumably you aren't using the brake pedal and if you aren't using the brake pedal then the RV brake lights would not light up.

For your 2016 Cadillac Escalade you will be good to use a 4 diode kit like the Roadmaster 4-Diode Universal Wiring Kit for Towed Vehicles # RM-152-98146-7. The way that the wiring on your Escalade is set-up isn't necessarily as big of a deal because the battery on your Escalade will be disconnected and the lights will be receiving their power from the motorhome.

In order for the # C51180 Echo to function, you'll need to have all the lighting functions and the 12-volt power feed at the 7-way functional. You can use a circuit tester like part # PTW2993 to confirm this. First, check the pin in the 1:00 position on the 7-way. You should be picking up power on this circuit. Yellow wire for left turn, green wire for right turn, brown wire for running lamps, white for a ground connection and red for brake lamps. It is normal for the Tekonsha Prodigy P3 # 90195 to be on even when your 2008 Cadillac Escalade is turned off, and it goes into sleep mode after 15 minutes of not sensing movement to preserve your battery.
The reason for it always being on is that's how it saves your preset settings, if it was turned off/unplugged each time the vehicle was turned off you would need to setup the controller each time.

On a 2019 Escalade, the plug you're looking for is in a junction box on the firewall to the left of the brake pedal. The junction box has a black cover, which will need to be removed and the # 3016 harness you'd looked at will plug into the socket shown in the provided photo.
