Find out how much the boat and trailer weight total, and check the Escape owner manual to see what the towing capacity is. The 6 cylinder Escapes equipped with towing packages can tow quite a bit more than the standard 6 cylinder models.

I would go with a 7-way for brake controller wiring on your 2011 Ford Escape, this is a much more common style of connector on trailer wiring. So for that you would want the part # ETBC7.
Having three wires coming off of the positive post of your battery would not be an issue at all. I have had 3-4 coming off of the battery on my car for several years without any issues.

It will give you the best opportunity to carry a bunch of different accessories but you would be right at the maximum most likely with 4 bikes and a 4 bike rack. The Kuat Sherpa # SH22G is about 15 lbs lighter than the Kuat Transfer part # KU74FR but the biggest thing that I really like about the Sherpa is what you already mentioned. It is rock solid when traveling. There is little to no movement of the rack with bikes loaded when you hit bumps as you noted in the test course videos for both which I attached as well.

The answer actually isn't very technical. Curt doesn't require that diodes be used with the Converter # C56196 however some Experts still like to recommend using a diode like part # RM-690 to prevent backfeed just because you are adding something different to the original wiring.
