The Curt Class III Trailer Hitch # C13186 that you referenced is confirmed to fit your 2016 Ford Escape and has a 3,500 pound towing capacity so the hitch itself is up to the task of pulling an aluminum boat trailer that weighs under 3,000 pounds. You will still need to verify the capacity of the vehicle itself, which you can find listed in your copy of the owner's manual or by contacting a local Ford dealer with your VIN. It looks like this capacity can vary quite a bit depending on if you have the tow package so you will definitely want to verify this.
You will have to adhere to whichever limit is lower, the vehicle's or the trailer hitch's.
In order to tow a trailer you will also need a wiring harness. If you don't have the factory tow package I highly recommend the Tekonsha T-One # 118566, which will plug right into factory ports behind the driver and passenger tail lights. After running the hot lead up to the battery this will provide you with a 4-Way connector to connect with and power a trailer's basic signal lights.
I have included an installation video that you can use for reference.
Lastly you will need a ball mount and hitch ball. I have included a great article below that explains how to choose the right one for your setup along with a link that will take you to our available selection.
