You will not need to do any trimming on the rear bumper of your 2021 Mazda CX-5 to install the etrailer Trailer Hitch Receiver # e98902, but I will say that if you have the Grand Touring model there is an underbody trim piece that will need to be permanently removed for the hitch installation. This just requires removing 2 plastic fasteners with a flat head screwdriver and then removing the panel though so you technically still won't have to cut anything.

There is a plastic underbody panel that is underneath the rear bumper which is removed by taking out the 2 plastic fasteners. This piece is cosmetic and will not void the warranty by being removed. The Tekonsha Prodigy P3 # 90195 and the Curt Echo Mobile Trailer Brake Controller # C51180 do not require the stop light switch. While these brake controllers do not require the stop light switch most proportional controllers like the Prodigy P3 # 90195 do. It uses the inertia to sense the amount of braking but still needs the stop light switch to indicate to the controller when to engage the brakes. As a result the red wire does still need to to be connected in your Mazda.

It's not uncommon for a trailer wiring short or overdraw to permanently damage the converter box of a trailer wiring harness like the # 118563. To determine if the converter box is at fault you'd need to test for voltage going into the box with a circuit tester like part # PTW2993 and then test the output wires for voltage as well. For the installation of the Draw-Tite Trailer Hitch, part # 76138 the muffler is very easy to remove. You just remove the two fasteners at the rear of the muffler and the 2 fasteners on the exhaust pipe going into the muffler and you can get the muffler out of the way while you install it.

I don't think I have actually seen anyone put the molding back on after removing it. The fixed mounting points were specifically designed to have a roof rack added on, so they are sealed and will not leak or anything.
