If you use a 4- to 7-Way adapter, such as # 37185, then you will just have the lighting functions on the trailer (minus reverse lights). On the adapter, you will have to ground the white wire to the vehicle frame, otherwise it will not work.
The blue wire is for electric brakes which you said you do not need. The black wire is for 12 volt power if the trailer uses any. If those functions are not needed you can just cap off those wires and stow them out of the way.

First thing you should do at this point is test the 4-way of the wiring harness with a circuit tester like # ALL640595 for voltage on all of the right pins when the taillight signals are being applied. Just like in the video I attached.

Your 2001 Chrysler Town and Country has what is called a separate or 3-wire lighting system. This means that the turn signals operate on different circuits/bulbs than the brake lights. But trailers use a combined system with the turn signals and brake lights on the same circuit (with few exceptions). As a first step, I'd recommend definitively finding out the tow capacity of your Town and Country. The 1800 lb capacity sounds about right.
