For your 2021 Mercedes-Benz Sprinter 2500 I recommend the Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" # C13388. This fully welded trailer hitch receiver bolts onto your Mercedes-Benz Sprinter 2500's frame with no welding required. It has a gloss black powder coat finish over protective base coat offers superior rust resistance and is known to last longer than the powder coating of its competitors.

For the 7-way you'll need to first install a 4-pole connector, for this I recommend the Curt Powered Tail Light Converter with 4-Pole Flat Trailer Connector # C59236.

This custom-fit T-One connector plugs into your vehicle's wiring harness, which is located inside your rear cargo area, behind the tail lights on both the driver's side and passenger's side. You will need to remove some interior paneling to access this harness. Once you've plugged in the T-connector, run the hot lead up to your car battery. Connect the lead to the included fuse holder, and then connect the fuse holder to the positive terminal on your battery and insert the provided fuse.

Once this is completed you can then install the Universal Installation Kit for Trailer Brake Controller - 7-Way RV and 4-Way Flat - 10 Gauge Wires # ETBC7 to get a 7-way connection on the rear of your Sprinter.

For a great starter ball mount kit I recommend the etrailer Ball Mount Kit for 2" Hitches - 7,500lbs # 989900. It has a 1-7/8" hitch and 2" hitch ball to allow you to tow multiple trailers. It has a 1" or 3" rise and a 2" or 4" drop to keep your trailer level while towing.
