For a cover that fits over a 5th-wheel hitch on your 2021 Ram 2500 (6-1/2 ft. bed without Rambox), I recommend the Pace Edwards JackRabbit Retractable Hard Tonneau Cover # 311-JRD7833. The JackRabbit engages the rails at 12" intervals so you can partially cover long items. This is a great feature just in case you want to leave the front portion of the cover closed while you are towing your 5th-wheel trailer. Also, the JackRabbit gives your truck superior water protection with drain tubes that funnel water from the canister out through a hole in truck bed floor. You will be able to fully close the cover with your hitch installed.
If your truck has a RamBox system, I recommend the RetraxONE MX Hard Tonneau Cover # RT60235. One of the great features of the RetraxONE MX is that it includes a locking handle that lets you easily open/close the cover and secure it at any point along the rails. Similar to the draining system of the JackRabbit, the RetraxONE MX has 2 drain tubes that let out any water that gets inside canister. You will also be able to fully close your cover with your hitch installed with the RetraxONE MX.
