In order for the Furrion Vision S Wireless RV Backup Camera System w/ Night Vision - Rear Mount - 5" Screen # FOS05TASF to operate in an "always on" manner you would want to wire it through your running light circuit instead of the reverse light circuit. If you did this, the camera would be active as long as the running lights were on and it would allow you to see what's going on behind the coach.
With that said, the best solution for this would be using the Furrion Vision S Wireless RV Observation Camera System w/ Side Marker Light Cameras - 5" Screen # FCE48TASL-05, which comes with side marker light cameras and a larger monitor. These marker light cameras will turn on each time you are passing someone or someone is passing you, so you'll have a view of what's on the side of your trailer as well.
I've linked review videos of these systems as well as an installation video of the side marker lights for you to have a look at.
