I bought a 2007 Monaco Diplomat 40SKQ and I want to Flat Tow my 2011 Ford Flex SEL depending where Im going. is it possible and what equipment do I need

With etrailer, it's possible. For your 2011 Ford Flex SEL you can use this base plate kit # 4421-1 for both an EcoBoost or Non-Ecoboost models. For a tow bar you can use the Roadmaster BlackHawk 2 Tow Bar # RM-422.
I suggest using the Blue Ox Patriot # BLU37TR. This is a portable braking system which is perfect for swapping between vehicles if needed in the future.
You will need to grab this Roadmaster wiring kit # RM-15267 to install your Flex.
For safety chains I recommend going with the # DL20119.
