Whats the difference in the DrawTite and Curt hitch for my 2020 Ascent Touring?

The biggest difference between the Draw-Tite Max-Frame Trailer Hitch Receiver - Custom Fit - Class III - 2" part # 76253 and the Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" part # C13400 is going to be how they look when installed. The DrawTite has a look extremely similar to the factory style hitch. It sits behind the factory hitch cover and is not visible at all when not in use. The Curt will sit below the rear bumper cover and has an exposed cross tube and receiver tube opening meaning that you will always be able to see the hitch. Outside of that they are nearly identical in function and will offer weight capacities well above what your Ascent is rated for. My pick would be the DrawTite simply for the appearance factor. It is a more in depth installation and will take a little longer but remember you're only going to install it once and you'll see it everyday. I've attached some photos to illustrate the difference for you.
There is a great option for custom fit vehicle wiring available as well the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector part # 118790 will give you a functional 4-way flat trailer connector and requires not cutting or splicing of your vehicles wiring. Tekonsha is the most dependable and reliable wiring available and will serve you well. I've linked the installation videos on these products as well for reference.
