Which hitch would you recommend for my 2018 Ford Flex for towing my pop up?

For your 2018 Ford Flex the hitch I recommend is the USA made Curt hitch part # C13110. This hitch has great towing capacities at 4,000 lb trailer weight and 400 lb tongue weight, is easy to install, and has a 2 inch opening which is the most popular hitch size.
For trailer wiring you'd then want the Tekonsha kit # 118472 which installs easily without requiring any splicing. See install video I attached for this and the Curt hitch.
Since you plan on doing some towing you might be interested in etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
