For a Leland pin box the best fifth wheel to gooseneck adapter is going to be the Convert a Ball part # CAB-C5G that you referenced. Only issue is that since you have a short bed truck you aren't going to have great turning clearance. Ideally you'd have a hitch that a rail adapter could fit like the X5 part # 16310 for B and W hitches or the # C16210 for Curt double lock hitches so that you could use a slider hitch like the Curt A20 Slider part # C16541.

The problem with the # AM3139 is that it's 8 inch offset turns with the trailer so you don't really gain much clearance with it when you need it at a sharp turn. Also, 8 inches wouldn't be enough. Your best option is a slider hitch that fits your 2018 Ram 2500's factory rail kit. For that the B and W Companion Slider part # BWRVK3670 is the best solution. This fits the pucks you have directly and will give you the turning clearance you need. This is the best hitch for your situation as well.
