I think I have what you are looking for in the Curt Pintle Hook Mounting Plate for 2-1/2" Hitches - 10-3/4" Shank - 8 Hole - 20,000 lbs # C48348. We also want the Curt Bolt Kit for Pintle Hooks and Lunette Rings, # C48330. The only adjustable hitch combo that will fit your needs is the Convert-A-Ball Pintle Hook Combo with 3 Stainless Steel Balls - Bolt On - 25,000 lbs, # PH1. This combination will give you the most versatility with the adjustable height and 3 hitch ball options and a pintle sleeve.
Another option that is not adjustable is the Curt Pintle Hook with 2-5/16" Ball for 2-1/2" Hitches - 20,000 lbs, # C48012. This is a strong forgesd steel construction with rust-resistant finish. There is a tethered safty pin included for the pintle hook. It's overall length is 15 inches.
With the mounting plate or the Pintle Hook with Ball, we will want the Pin and Clip For Class III, IV and V Trailer Hitch Receiver, # C21500, or for more security on this investment the Trailer Hitch Receiver Lock - Extra Long - Flush Design for 2-1/2" Trailer Hitches, # e98881.
