Using a Ball Mount with Higher Tow Rating Than Provided by 2008 Toyota Highlander
Question:
Would this 6000lb ball mount void my warranty onm the Toyota and be safe to tow up to 6000lbs? Even though the vehicle is only rated to 5000lbs??

Let me begin by stating that any towing system will only be as strong as its component with the lowest capacity.
It is possible to have a hitch, ball mount and trailer ball with higher tow rating than that of the vehicle itself, but you will still be limited to the vehicle manufacturers stated maximum towing capacity which is 5000 lbs in your particular case.
Using a ball mount itself with a higher capacity than the 5000 lbs stated by Toyota will not cause any warranty implications and is perfectly safe and acceptable, but using that ball mount to tow a trailer that exceeds the towing capacity can damage the vehicle and cause warranty issues.
I cannot recommend exceeding that 5000 lb figure stated by Toyota.
