The B & W Turnoverball Underbed Gooseneck Trailer Hitch, part # BWGNRK1108 is a good fit for your 2007 Ford F-250 Diesel with the 8 ft bed.
When we do an installation in our shop it typically takes one of our professional installers about 2 to 4 hours. Please keep in mind this is in a shop with lifts and all of the tools available. Also, these folks have been installing hitches for a while.
The estimate I was given by the shop was that depending on the tools and how easy the access to the underside of your truck is, the installation probably would take someone with a good mechanical ability about 4 to 6 hours. If possible I would enlist the help of someone to make the job that much easier.
