I did a little research and it looks like the stock fan in a 2011 Ford Escape is 500 to 650 cubic feet per minute. Flex-a-lite fan # FLX412 puts out 2,500 cubic feet per minute but draws much more power, 22 amps.

Since the pin weight of your camper is 2.1k, I recommend going with the LoadLifter 5000 opposed to the 7500. While technically there is not reason you couldn't use the 7500 kit, it really is not necessary for a camper like yours. Generally the 7500 kits are used on vehicles that have a constant heavy load in the bed like a salt spreader or truck bed camper.
