Yes, the Dexter 6k trailer hub part # 42660UC1 that you referenced would fit on a 7k Dexter axle. The spindles are the same between the 5.2k and 7k trailer axles so the hubs are interchangeable.

The Demco Channel Tongue Trailer Coupler #DM15629-52 has a 7-3/4" channel from the back of the coupler to the inside lip near the ball latch.

Based on what you listed the replacement hub you need is the part #42660UC1 as it has the 6 on 6 inch bolt pattern and uses the same bearings you have as well.
