Looking at a 2007 hitch hiker2 uktg with glide ride hitch. How can I convert to my gooseneck ball

To convert a 5th wheel with a Ride Glide pin box to a gooseneck you have a couple options. First is if there is a sticker or placard on the Ride Glide with the serial number you can call Demco and see what pin box it replaced. Otherwise, you'll need to do some measuring to figure out exactly what you have. I have added a link below to a help article called "4 Steps to Choosing Your 5th Wheel Pin Box" and if you scroll down a bit in the article, it walks you through the measurements that are needed.
Then you will choose based on that; for example if the Ride Glide replaced a Lippert 1621 you could go with the Reese Goose Box # RP85FR.
