I like the Draw-Tite trailer hitch # 41944. It will fit long and short bed models of the 2001 GMC Sierra 2500HD. It has a gross trailer weight capacity of 13,000 pounds and tongue weight capacity of 1,950 pounds. When used with weight distribution the gross trailer weight capacity is 16,000 pounds. I have linked the instructions and a video showing a typical installation for you.
For a compatible ball mount kit I recommend the etrailer ball mount kit # EBMK2416. It comes with a ball mount, 2 balls, a hitch pin with clip, and a storage bag. You truck should have trailer wiring already but if you need to add and 7-Way and 4-Way you can use # HM40975.
