The 1992 Chevy C/K series trucks and the 2007 GMC Sierra, whether it be a Sierra Classic or the new body style would use different hitches, unfortunately the hitch from your older Silverado wouldn't work on your GMC Sierra as the frames were different.
For your 2007 Sierra 1500, if you have the Sierra Classic, I'd recommend the etrailer brand # e98849 Class III hitch that you'd looked at which has a 6000 lb towing/600 lb tongue weight capacity or 10000 lb/1000 lb if used with weight distribution. For a higher capacity hitch, go with the Curt # C14332 which offers a 10000 lb towing/1000 lb tongue weight capacity or 12000 lb towing/1200 lb tongue weight capacity if used with weight distribution.
If you have the 2007 Sierra new body style, the # e98849 would also fit, for a higher capacity, use the Curt # 14301 which has the same capacity as the Curt hitch mentioned above.
I've linked to installation videos for the hitches mentioned above.
