The first thing you are going to want to do is consult the vehicle owners manual to determine if your 2007 Chevy Tahoe can be flat towed and if there are any specific requirements, restrictions, or recommendations.

As long as your Tahoe isn't a hybrid model use base plate kit # DM9518200. I like the Demco kits beause there's nothing to remove when you're not towing and you can barely see them on the vehicle. For a compatible tow bar use the Dominator # DM9511008 which is rated for 7,500 pounds and includes safety cables.

For trailer wiring, for a more permanent solution if you will be towing the vehicle frequently, I recommend the diode kit # RM-154. I have included a link to a video that shows how this kit works. If you will only occasionally tow the vehicle, then a magnetic light kit, like # RM-2120, would be the way to go.

Most states now require a supplemental braking system in the vehicle being flat towed. The easiest systems to set up and use are the portable systems like the Blue Ox Patriot # BLU37TR. This is a proportional system that applies the vehicle brakes in proportion to how much the tow vehicle is braking making for safe stops and reduced wear and tear on both vehicles.
