what is the difference between support capacity and Lift capacity

The support capacity is how much a jack can hold whereas the lift capacity is how much a jack can lift. The Bulldog Square Jack w/ Footplate part # BD190754 has a 8,000 lb support and 5,000 lb lift capacity. If you will be using the jacks to lift and lower a trailer onto a hitch ball or kingpin then they will need to be chosen according to their lift capacity but if you are just using them to stabilizer or support a trailer then they can be chosen according to their support capacity.

Generally speaking, it will always be better if the jack is overrated for its intended purpose as this will allow it to last much longer.
