Recommended Hitch-Mounted Bike Rack for Avoiding Camera Interference on 2018 Kia Sorento

Will the backup camera view be blocked by Thule T2 Pro XT bike rack 1 unloaded and tray upright and 2 loaded with a bike on a 2018 Kia Sorrento? Thanks. Are there any other good options?

While it shouldn't completely block the backup camera on your 2018 Kia Sorento, The Thule T2 Pro XTR 2 Bike Platform Rack # TH83JV referenced in your question will likely interfere a bit with the view. This will be the case with any hitch-mounted bike rack.
The Thule T2 might provide a better view when compared to racks that feature a prominent center mast, but there is still going to be some interference, especially with a couple bikes loaded or with the rack folded against the vehicle.
I also recommend taking a look at the Kuat Transfer V2 Bike Platform Rack # KU84FR. In addition to not having a prominent center mast, this rack is also absent of an additional crossbar along the platform, which should lead to better visibility on the camera. This platform-style rack can hold up to 2 bikes at 60 pounds each and is compatible with 2 inch hitch receivers.
I have attached video demonstrations on both of these bike racks so you can get a better idea as to exactly how they will look when installed on the vehicle.
