Trailer Hitch Recommendation for a 2008 Honda Odyssey

which 2in hitch will be the most hidden from view? also, which one will give the most ground clearance?

Because of the mounting locations present on a 2008 Honda Odyssey and the fact that all of the available hitches have cross tubing that is straight across, all of the hitches will be visible on the van. You can look at the pictures on the product pages for the hitches to get a good idea of what they will look like on your van. I have included a link to all the hitches for you to view.
I recommend going with a class III trailer hitch because they have a higher capacity and are compatible with more accessories than the lower rated hitches. The Draw-Tite Hitch, # 75270, that you have referenced is a good choice. With this hitch installed, there will be 11-1/4 inches of clearance from the ground to the top of the receiver tube opening and approximately 9 inches to the bottom of the receiver. I have included a link to the installation instructions and a video showing a typical installation.
If you plan to do some towing, the recommended ball mount is # 2753 and you can use pin and clip # PC3. For a ball you can use # 19260 (1-7/8 inch diameter) # 19247 (2 inch diameter), or # 63847 (2-5/16 inch diameter). For trailer wiring use T-One Vehicle Wiring Harness, # 118438.
