I am buying a 5th Wheel with max gross weight of right at 10,000 #. Are there any reasons to buy a 15K vs 12K slider?

There is no reason you need to go with a heavier rated fifth wheel hitch if your trailer weighs 10,000 pounds. However, you mentioned a Demco and the lowest rated Demco for your 2016 Ford F-250 with the factory rail kit is the # DM8550024 which is rated for 18,000 pounds.
It's worth mentioning that there's no harm in going with a higher rated hitch, especially if it has other features you are interested in. The Demco Hijacker Autoslide slides up to 14 inches, which is more than a lot of sliding fifth wheel hitches. Also, its best feature is the autoslide so you don't have to get out of your truck and manually activate the slide when making sharp turns.
