You will need the Hidden Hitch Trailer Hitch, # 75305, which will work on the 2007 Dodge Caravan with Stow-N-GO seating. It is a Class III hitch and has a towing capacity of 3,500 lbs. with a tongue weight of 350 lbs.
On the 2007 Dodge Caravan with Stow-N-GO seating the Hidden Hitch Trailer Hitch, # 75119, that you have referenced will not work.
Also needed is a Curt Ball Mount, # C45010, a Pin and Clip, # PC3, and a hitch ball. The hitch ball you need will depends on the size of the coupler on the trailer you will be towing. If it is a 2 inch coupler then you need Tow Ready Hitch Ball with 2 inch Diameter Ball, # 19247, if it is a 1-7/8 inches coupler then you need Tow Ready Hitch Ball with 1-7/8 inch Diameter Ball, # 19260.
The wiring harness you will need is the Draw-Tite T-One Vehicle Wiring Harness, # 118300, which will plug in to the vehicle taillights. It does not require any cutting or splicing of the wires.
