The U-haul 5x8 trailer has a maximum GVWR (maximum recommended weight of trailer plus contents) of 2700 lbs. The trailer's tongue weight, which could be anywhere from 100 to 400 or so lbs will cause the rear suspension of your Highlander to squat to a certain degree. It sounds like you have a 7-way connector installed on your 2016 Toyota Highlander that does not have all of the functions connected.
If that is the case then you will need the # 10-2-1 and # 5506. Thanks for all of the dimensions you listed. Since drop/rise needs the measurement from the ball mount platform and not the top of the ball you will need to take one more measurement to be sure.
